Ingredients:


  • 1 head of cabbage, cored and chopped

  • 6 slices of bacon, chopped

  • 1 large onion, diced

  • 2 cloves of garlic, minced

  • Salt and pepper, to taste

  • Optional: chicken broth, apple cider vinegar, mustard seeds



Instructions:


  1. Cook the Bacon:

    • In a large skillet, cook the chopped bacon over medium heat until crispy, about 6-8 minutes36.

    • Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate.


  2. Prepare the Onion and Garlic:

    • Leave about one tablespoon of bacon grease in the pan. If needed, add a bit more oil.

    • Add the diced onion and cook until translucent, about 2-3 minutes

    • Add the minced garlic and cook for another minute, stirring constantly to prevent burning.


  3. Add the Cabbage:

    • Add the chopped cabbage to the skillet. It might seem like a lot, but it will wilt as it cooks3.

    • Cook over medium-high heat, stirring occasionally, until the cabbage starts to soften, about 5-7 minutes.


  4. Enhance with Optional Ingredients:

    • If desired, add a splash of chicken broth or apple cider vinegar to create a sauce and add moisture

    • For an Irish twist, add mustard seeds for extra flavor


  5. Combine with Bacon:

    • Stir in the reserved bacon and continue cooking until the cabbage is tender and slightly caramelized, about another 5-10 minutes


  6. Season and Serve:

    • Season with salt, pepper, and any additional herbs or spices you prefer.

    • Serve hot, garnished with fresh herbs if desired.

  • Texture: Adjust the cooking time based on your preferred cabbage texture.

  • Flavor: Experiment with different seasonings like smoked paprika or maple syrup for a unique twist
